If you are one person and looking for small, budget friendly meals than I would advise The Students Vegetarian Cookbook.  It has nutritional info and it also has lots of recipes for one or two people using cheap, easy to find ingredients.

If you are trying to cook larger portions, the I would recomment 5 Ingredient Vegetarian Cookbook.  It also has a lot of recipes, it only takes a short time to cook any of them, and it tries to use convenience foods like canned or frozen things to cut down on time.  Plus you dont have to buy a lot of things.

Rachel Ray has a very nice vegetarian cookbook if you want a little more diversity and gourmet meals.

And if you just want incredible recipes (she is for vegans though) Dreena Burton has three cookbooks that are just great. 

Also, the Idiots Guide to Becoming Vegetarian not only has great recipes, but it has all the nutritional info.

But the best resource I have found for nutrtional info is Mercy for Animals vegetarian starter pack (google it), it is a magazine that contains good nutritional info in a simple easy to follow format and they also have recipes.&lt;br&gt;&lt;b&gt;References : &lt;/b&gt;&lt;br&gt;</description>

Think it is around $19 or $20 now and was $10 or $11 when I got it, but like Kramer&#039;s cookbook, every single thing I have made out of it has be wonderful!
